|Cooked rice||1 cup|
|Frozen corn||1/2 cup|
|Sweet chilli sauce|
Beat the eggs and add potato starch
Heat olive oil with medium heat. Add green onion, mushroom, corn and broccoli. Cook and stir for 1 min.
Add cooked rice with sweet chilli sauce. Mix well.
Remove from skillet. Keep it warm
Heat a small skillet coated with cooking spray over medium heat. Add egg mixture.
As eggs set, lift edges, letting uncooked portion flow underneath.
Place the omelet on top of the rice. Top with the ketchup.
